Non-white here. Mayo works really well in a lot of sandwiches. The trick is not to use too much, and to use it strategically. Mayo not only adds a bit of richness to the sandwich, but it can also help keep it from getting too soggy. You can't use just mayo though. You need some mustard or something vinegary or spicy in there.
