Is there another quick way to make potatoes besides the microwave? I just tried it but the skin was very chewy by the time it was cool enough to eat.

If you put them in the oven an hour ago they'd be ready by now.

cover it in foil in the oven and the skin won't get that way. fucking moron. what a mongoloid.
that being said, post here more and you'll learn some common sense cooking my friend, welcome. : ]

Not really quick, but I've found running a metal skewer through the center seems to cut down the cooking time significantly when grilling them. Put a little oil on the skewer first or you rip the guts out of your potato when you remove it.
Preheat to 220C
Cover potato lightly in olive/rape seed oil, salt and pepper. Pierce with fork all over.
Microwave for EXCALTY 2 mins, turn over, EXCALTY 1 more minute on high power.
Stick in oven.
Done to perfection in 10 minutes

Cube it and boil it. Boiled potadoes drizzled with liquid butter and salt and pepper.

I'm looking for crispy skin though. Could I just roast the boiled potatoes after?

This. Cook the potato in the microwave (I normally do it with water as well though), finish it in the oven to crisp the skin.

he meant it was chewy out of the microwave, genius
Convection ovens
microwaving it then putting it in the oven yields crisper skin than just putting it in the oven.
