I get something unique and interesting/ their signature dish whenever I go to a new restaurant. I guess I get it in some sense, using the same dish as a control to more easily compare places, but it seems like a bit of a boring way to go about things.

It's litterally one of the easiest dishes I know if you don't count fodd that's so basic it's not really a dish like fried eggs.
The good thing about it is good restaurants will have a neat presentation with a crust and all that jazz.
But really the best way to order onion soup is at a bar when they have it. Won't come with a crust and the soup will be based on viandox but it's that little nostalgic feeling you get and the heat in your belly when it's raining outside that makes it worth it.
In actual restaurants, I'll try to order any kind of soup if they have one (except asian soups, because that's something else), it's either something the regular get or a speciality. Plus it's always on the heater and you'll get served promply.
Al pastor or lengua tacos
