so i cooked two chicken legs for 40 minutes at 350f in the oven in a glassware pot filled with barbecue sauce, now i'm going to cook them for another 40 minutes at 350f on a tray

is that long enough?

honestly i was high and thought it was a good idea ("this'll totally impart more flavour") but came down and then realized maybe it wasn't such a good idea and i should probably oven roast is properly

Try putting them in for another forty minutes next time OP.
I usually cool small portions of poultry for an hour and a half at a time as well.
