Fresh garlic is so much better than store bought or dried, it a world of difference, and it doesn't have to take much space if you only grow a few bulbs. Puts your cooking up at least one star by itself

when half the leaves are dried up and the other half are still green, check it.
dig it up a little and check the size of the bulb, don't take it entirely out of the ground in case its still small, if it is put it back and let it grow a few days, if its grown pull it

I know that Quinta sells some grown in Portugal. If you're from europe you may want to check them out. Their bell pepper is pretty good too, better than everything I got in stores so far. Also their avocados are great, but they are out of season right now.

China is the largest exporter of way way more than ginger, just look up the wiki list (agricultural commodities exports by countries)

Year 1: Peppermint, chocolate mint, oregano, lavender
Year 2: The same (peppermint, choco mint, lavender), basil, dill, vietnamese cilantro
This year: Parsley, chives, tarragon, thyme, rosemary, bay laurel, spearmint, grapefruit mint, orange mint, new (oregano, vietnamese cilantro), and the same motherfucking lavender.
Next year: Whatever herbs above survive the winter, plus a new choco mint and introducing seeds (the parsley above, 4 new lavenders, anise-hyssop, bergamot, menthol mint, lemon balm, bergamot, licorice, thyme, basil, savory, and fennel)
