I got 3 lbs of carrots. What can I make out of them that is /ck/-approved?

I use them in avocado+carrot vegetable "sushi" rolls.

Cutting them up and dipping in hummus is a good idea too.

-roast them
-put them in stews (or curries)
-make pickles
-boil in stock or broth until tender, then drain most of the liquid. add butter, salt to taste, and some black pepper. still very simple but a big step up from steamed (though I don't do it often due to the butter).

Use huge carrots, preferably.
Preheat oven to 300

Prep:
Peel
cut in half (if big carrots)
cut slits all around down the carrot
cut into 1.5-2" pieces on the bias

Cook:
Lots of butter with brown sugar mixed in
toss it in on medum, spooning butter over the top
Season with smoked paprika, onion powder, and a dash of pepper

Put in an oiled pan in the oven,
Reduce butter (straining solids), take off heat
30 minutes before pulling the carrots, heat the butter, add honey
glaze, and wait

Cook them Blumental style in a fuck ton of butter, with a spoon of castor sugar. Right before serving add Thyme leaves.

And, of course, you can always juice them and freeze for later use.

The perfect compliment to the natural sweetness of carrots is Mexican tarragon. I have a kitchen herb garden, and added this gem last year. 8-10 full leaves added to a medium pot of carrots will be sufficient. Enjoy!

Cut them up into chips along with sweet potato. Season with rock salt and cracked pepper and any herbs you like and drizzle with olive oil. Bake in a mod oven for about 10-15, turn them and cook for a further 10 or so until cooked. They are awesome with a rare steak.
