Meat: Overcooked, for obvious reasons. Also beef, since I can eat a well done steak, but not a rare one. A little on the red sight of medium is ok, but anything less cooked gives me the creeps.
Veggies: Undercooked. Overcooked Veggies are just a mess and you could as well just order them mashed.

Protein overcooked, unless it's beef, then undercooked. I get my beef medium, but I'm OK with medium rare. Vegetables undercooked - raw veggies are much better than soggy ones. Wheat overcooked - crunchy is better than doughy.

Almost everything is better undercooked than over.
most proteins except for chicken and pork are fine to eat raw.
Almost all veg can be eaten raw except for the tough tubers like celeriac and swede.
carbs like pasta, rice and potato are tough but tolerable under cooked, over cooked they can become a mealy mushy mess with no texture at all.

If it's meat or similar from a low-quality place then overcooked for sure. Something like Pizza I'd rather have undercooked.
how under/overcooked are we talking?
in general i'd probably say meat, undercooked, except for poultry and seafood. i'll take my chances with beef/pork/etc though.
everything else overcooked, i don't mind some burnt bits on my veggies/bread/etc.

I love doughy cookies and I love chicken thats just a little bit burnt.
Undercooked fish and fresh meats at mid to higher end restaurants.
Would rather take overcooked if it's dishes in cheap or chain restaurants with low quality/sanitation, that's asking for food poisoning.
Undercooked. I don't like my food very hot. I have a pretty good constitution when it comes to eating undercooked food, so I'm semi-willing to take the risk.

If steak, a tad undercooked is ok
Not certain when it comes to fish, but as a general rule I prefer overcooked to undercooked due to germs.
