Hey /ck/ have any of you ever heard of egg coffee? Ever tried making it? I made a pot of it earlier today, and it's a surprisingly smooth cup of coffee. Seems like a decent way to make an ok cup of coffee with poor quality beans.

Yes. It's basically a consomme clarifying technique but with coffee. The Norwegian immigrants brought it with them to the states but it's mostly forgotten in Norway/Scandinavia in general.
must not be confused with the new egg coffee, which basically is bullet coffee but with an egg to froth it up rather than butter.
Just made my woman Vietnamese one with egg-clarifyed coffe as a base, pretty good, but recipie demands condensed milk and "head" turned out supersweet, so just use a bit of condensed milk and substitute the rest of it with whipping cream.

I always knew it as Hungarian rather than Norwegian, but yeah, I've had that.
Pic related is an egg-coffee thing where I'm from. Egg yolk and sugar are beaten together to light yellow, hot coffee is added a drop at a time to temper the egg and avoid scrambling, then streamed in while beating. This makes a big, eggy foam which is then divided among serving cups and the rest of the coffee is poured in over it.
