You thought wrong.
buy at least 1" thick boneless pork chops
season both sides with salt, pepper, garlic powder, sage, and thyme.
wrap them in plastic wrap and lightly punch/mash them to make sure all the spices/herbs will soak and stick in
stick them in the fridge for a night
next day pour a little olive oil on the skillet and put it on high until the oil starts to smoke a bit (not really good but its the best way to make sure its hot enough)
place the chops so that the fat side is toward the middle, and depending on the size of your skillet, only do 2-3 at a time and dont crowd them
dont move them around or touch them, and watch the meat side. you should see the bottom turn beige and as soon as the pink in the middle starts to fade flip them over. the cooked side should be nice and brown-seared around the edges.
check the temperature with an instant read thermometer and the second it hits 145F take them off and let them sit for a few minutes.
