It felt like a first take.
Well, I'm a scientist, and I can cook, and I'll tell you this video was only 25% the way a scientist would speak. When he talks about heat, neare says a work about temperature (high or low) and applying it until a temperature is reached in the eggs, he makes little distinction between time and scale, but implies that heat makes a difference. But, is he talking about high heat vs low heat? A change in temperature in degrees? He wants you to think so when he says it, but instead is quite vague never once mentioning a temp in the eggs. He makes only one distinction to turn down the burner near the end. He wants you to believe that he's giving you the way to do it, like an authority with all the protein speak. The lead weight test? That poor side that had nothing added? He could have added water to that. He's like C. Kimball, with all his scientific looking control group style of cooking, where you do the control group like only an idiot would do, if he were reinventing the wheel.

tl;dr
Carry on as you were doing your eggs the way that you liked them before, since you may like them runny, soft, well-done, or how your culture prefers them.

Fact is...Michelin is irrelevant. Maybe 50best is better, or a guide like Zagat. Michelin gets it badly wrong. Their so-called reviewers are speaking out against it now, and the salary for the required resume experience is a pittance. People of quality would never work for less than $25k, or for those hours. It's a thing of the past.

I think this is a pretty good little video.

What I usually do is scramble them up real well, add some salt and cayenne pepper in, pour them into a skillet with some olive oil, and just continuously stir. They end up American usually because my skillet is so wide.
