Thanks anon, just found a few recipes online for scallop squash but their all kinda boring like just cutting it up and cooking with olive oil salt and pepper. If anyone has any other ideas let me know

You can basically do anything you can do with zucchini. I say grill it with some beef satay and serve with peanut sauce.

Maybe you can cook it like a spaghetti pumpkin?
cut it in half, pour oil, salt, ginger on the cut,
put it in the oven,
than scrap it with a spoon like a soup out of the peel.
