It has a metric shit ton of sugars (increases viscosity), citric acid to take the edge off the sweetness buffered with Disodium phosphate, gels, goms, surfactants and emulsifiers.

I would use Xanthan gum though, as you can get it in most supermarkets.
It's usually sold with the gluten free stuff. It can be used in baking to reproduce the structure in breads and cakes that gluten normally produces.
But it will thicken your shake up no problem.

you should NOT need to add sugar to it, this is how you tell a milkshake is poor quality
a nice blender will emulsify the entire thing and get perfect texture provided you put enough icecream in it
