Beef broth is a pain is the ass to make and store-bought beef broth isn't really even beef broth. You could make veggie stock for you vegan friends but honestly there's no difference. Chicken stock has a nice, neutral flavor and it just works with everything.

Depends on the soup IMO, like you'd never use chicken stock in a French onion, beef in a chicken soup, OTH, there are vegetable soups that could take either. At any rate, making stocks is generally expensive and a pain in the ass, especially beef stock. Occasionally I'll buy a roasted bird from the store and desperate the meat and make a stock/broth from the carcarcass for a chicken soup, it works fairly well, but really you can't go wrong with pic related. I use it almost every day, for maximum effect mix beef, chicken and veg together.
Well different stocks taste different.
So no it doesn't matter.

How is beef broth any more difficult to make than chicken broth?

It takes way longer. You have to keep boiling the beef the whole day, while the chicken stock would be ready in a couple of hours.
