For anyone who wants to try it, it's just NOT worth it. It is not that good. It's not really that much a delicacy. It deserves to be put in the trash due to risk. No one can inspect a brain visually and know it's free of prion unless it were very end stage (chronic wasting, essentially fallen cattle). Because of the risks (and actually knowing someone who died from CJD), I am picky about my origin of sausages, and meats which use offal.
