Buy i thick steak and eat family style. You dont have a enuff meat on a steak to sear at all. It takes practice. Also thisk steak and once you have a nice color flip and add a couple pats of butter and constantly baste the top and it will get a nice crust and deepen your sear. Keep practicing and pay attention to what you want and how you did it last time. Seariously thicker cuts or your wasting
