Anything that has mustard seeds in it, but not not something with a stronger color that would cover it up.
Green spices/herbs like bay leaves will work for green.
Shallots will make a pink color kinda like that of beets, but lighter in color. It takes time for the color to develop; it's a chemical reaction of some kind unlike the normal "dye".
