One red onion.
One sweet onion.
Olive oil.
Salt.
Pepper.
Fresh dill.

Take a baking tray. Put some aluminum foil over it for easy cleaning. Chop the onions into course chunks. Drizzle with olive oil. Season. Other herbs and spices might work too, but salt, pepper and dill are enough.

Stick that shit under the broiler for a few minutes until nice and hot and juicy.

Makes a good side dish for any meal. Onions are almost perfect the way they are. No need to over do it.

At the dawn of the Vidalia onion, James Beard featured them on a sandwich. I grew up watching my grandfather shock and awe my grandmother making a sliced vidalia sandwich. It was like grandmother repellent! It's pretty tasty though and AMAZING with dry cocktails, from wines to a dirty martini. Pair them with an old fashioned poker card game.

I think many versions exist out there online (today) as versions of modern finger tea sandwiches with a lot of jazzed up extras, but without the knowing an actual old person, you might not realize these were pretty basic sandwiches might not have had any herbs either, just butter and/or homemade style mayo (which is far better than storebought), and that the early Vidalia onions weren't quite as sweet as our modern various ones that are as sweet as candy, but certainly weren't normal onions. They were a revolution in delight to people who tried them for the first time!

Was just reading, and I think the trick is to get the flour to stick first. It's easy to do with chicken or pork, because they've got fat and the flour sticks to fat like glue. One trick I read is to put some salt in your flour dredge. That would pull water out of the onions via osmosis. the other trick is to cool the onions first in the fridge, then pull them out and dredge, moisture forming from condensation. I bet that would only work in a humid environment though.

I can't say I'm a fan of raw onions (barring red ones), but they're one of the best flavors one can bring into a dish.

One of my favorite things that prominently features onions is a bagel with lox, red onion, cream cheese (with chives), lettuce, capers, and tomato. Maybe some cucumber slices too.

i just cut the petals, dunk it in egg wash mixed with a splash of cream, then you shake n bake it to coat with seasoned flour, dunk in egg wash again, and repeat the shake n bake

then drop it in a pan of oil

super good, even if you don't get the breading deep down in the petals its still enjoyable

homemade campfire sauce too: mayo/bbq sauce/ranch/worcesteshire/a splash of hot sauce

Could be? It is. I add a bit of butter to the griddle and add some diced onion. Sautee on a slightly higher heat so you get some browning, then push to the sides. Add your buttered bread, cheese, and top with your grilled onions, then top with your bread (add some spicy mustard and a few grinds of pepper for a kick). Flip and serve as usual. HNGH.

I usually do the tomato-grilled cheese when I want something different. Or I cheese up the bread on the grilled cheese, with a thin smear of butter, another thin on that of mayo, then a dredge through grated parm. Crunchy crust and cheesy. (The mayo is an oil barrier that lets the parm get as crispy as a parmesan crisp).

It's a bit easier if you cut them the day before and then put them in the fridge. Make sure that the batter is moist and goopy, otherwise they'll burn. Fry at 350 for two minutes, flipping them carefully halfway. Also, make sure that the batter covers all of the ring with no part of the onion sticking out, including where your fingers grab them - any exposed onion will go black.
