Burger done-ness. How done is this burger? Too done? I've heard you should cook a burger until the juices stop coming out red, is this true? It seems to me this would result in a majorly overcooked burger, as this burger was still juicing red juice when I took it off

it depends on your preference. some people prefer well done, some people prefer med rare, some people want it barely cooked at all.
i like mine well done because anything less just has an unpleasant mushy texture in my opinion, but i won't tell someone they can't eat their's med rare if they like it that way.

Some meats need to be cooked more than others. Sometimes it's more of a safety thing than a texture thing. Ground beef, unless you're a pretty cool rich guy with a great butcher, is probably low-quality, poorly-cooled scrap meats. Unless you cook it properly, you'll enter diarrhea city. Some people enjoy rolling the universe's dice by eating it raw on "cannibal sandwiches", but I value not doing that shit.
It's important to reach a good internal temperature. After that, consume whenever.
