Hi, I didn't expect a reply. It was two seperate flavors, but I got them on one cone like a mad lad. The shortbread tasted like a really original cookie dough flavor but with shortbread pieces. The ginger was like a creamy ginger ale in ice cream form with ginger flakes added.

OP, rosewater icecream with crumbled pistachios is my favorite. I can only get it when I go to Afrah's in Dallas and I miss it so much.

Also, definitely get one of those nth-types-of-chocolate mixes. That's just definitely going to be eaten up. Make sure to vary the chocolate flavors and consistencies to where each part is easily differentiated. Large chunks of the mix-ins and veins of fudge is correct. A purée just ruins it.

I had a fantastic Mozart ice cream in France once - you don't see those much in the UK so that'd be great.

A high quality chocolate ice-cream is a must, not a sweet milky one, but dark with caramel undertones.

Lastly, I'd be looking for a good rum raisin, or other alcoholic ice-cream; just enough alcohol to keep it soft, and to give you the aroma of the drink through your nostrils.

Seconding Thai iced tea.

The best ice cream I've had in an independent ice cream shop was marionberry, but any unique berry flavor would be good as long as it's not just swirled into vanilla. Make sure you have a good cotton candy.

For something really unique, experiment with juniper berries or pine syrup for a Christmas tree/Alpine/gin flavor. Make it a nice deep green, mix in other Christmassy flavors like nutmeg, mix in little red candy pieces.

A red-green-yellow blend for a Jamaican/tropical flavor comes to mind, like coconut-mango-strawberry, possibly subbing in banana or rum for one of them.

I've got a local dairy setup to supply the mix, I wanted to make the ice cream mix myself but i came to find out that even if you start with all pasteurized ingredients you're required to pasteurize them again before churning, and not like just heat it to blah blah for a little bit but buy a pasteurizer and aging tank and keep a detailed rotating log on how long what's been where.

You can find that same machine on amazon for 212 bucks. I own one and keep it next to my movie theater and pool.

A chest freezer and some round ice molds would probably be another 2 or 300 I would guess... Though you might get away with your own kitchen freezer if you don't have a lot of customers... Or a used freezer ir something.

Syrups are 8 bucks per quart premade, you get lower prices by buying syrup concentrates by the gallon and mixing with your own simple syrups.

Generally able to sell a sno cone for 2 or 3 bucks, cost of manufacture is pennies. Machine and freezer pay for themselves in the first 3-500 snoballs as far as I can tell.

There are better machines out there, honestly this cheap one does ice up a bit from time to time - sort of have to get used to the controls and use "warm ice" but it'll shave 10 pounds of ice into over a dozen snoballs in about 2 minutes. Generally faster than customers will want them.

Orange cream or peppermint would do it for me. Sometimes I'll get meme flavors like birthday cake or cotton candy, but I just don't like passing up weird flavors and that causes me to buy bad flavors that I really don't enjoy.

Stuff with candy in it is not really my thing, but I know a lot of other people love it. I only ever bother with oreos or cookie dough because those are top-tier in ice cream. Bits of batter or chocolates or whatever really aren't that great.

I like coffee and green tea ice cream but I don't meet a lot of people who like the former, or who have even tried the latter.

I dont know, fair enough man. Snoball shacks never do well outside of new Orleans and the southern coast anyway. I would say you'd need to rely on ice crew sales anyway no matter what. But some people will pay 4 or 5 bucks for a stuffed snoball. Snoball on bottom, scoope of ice cream in middle, snoball on top.

Maybe it wouldn't be too popular, or keep you afloat, but it might boost sales a little bit.

If I were opening an ice cream shop in the south and had counterspace, and a reliable source of quality water/ice I'd add it to the rotation just to see what happens.

OP, make sure you rotate your flavours on a daily or at least weekly basis so people are coming back in hopes finding something new and awesome or their favourite coming back.
I'd also suggest that you have a few vegan/gluten free/fructose friendly/whatever flavours to pull hipsters in. Maybe label green tea with 'it's got antioxidants!' Depends on your area ofc.

Might I suggest something else? I have found that each culture around the world has one phenomenal flavor of ice cream for kids that even grown-ups go batshit crazy for when they remember how good it was. My suggestion is that you seek out those specific flavors and recreate them. For instance, I had an ex-boyfriend who raved about a malty corn-flavored ice cream he had as a child in China. Or in my case I can't forget the push-up creamsicles I used to have as a kid from the ice cream truck. I'm sure every culture's got one. If you assembled them all in one place... oh my god. It would be awesome.
