Yea you pretty much got it right. Dive into desired size, boil for about 5 minutes then pan fry or roast in the oven. I like to take some of the fat off my bacon cook it in a oanuntil it gets crispy then remove it before it burns. I'll cook my onions and garlic in that and add the potatoes once the onions get some color. After wards I'll top the potatoes with the crispy bacon fat. That with eggs and tomatoes is delicious.

Except for fried chicken batter component, I hate buttermilk - but them taters look mighty tasty, though I'd put some fresh coarse ground pepper on top.

lmao nice. Tomorrow morning I'll do this. I have potatoes, pickles, I'll see if the stupid hen has produced eggs and I'm sure I can find some tomatoes in the garden. Do you eat the tomatoes fresh or do you grill them? What about the eggs do you pan fry them normally or you do you do something like hash with the egg swished around the potatoes? Can I put BBQ sauce on top of this?
