How many months after a bottle of olive oil's best by date

It won't make you immediately sick, but rancid oil is very unhealthy for numerous reasons. Just smell it and taste a bit. If it smells and tastes fine, it's fine.

It'll depend on the light/ heat/ oxygen it's been exposed to and use by dates often don't mean shit.

I would completely ignore the date on oil. The only reason why it's there is because ALL foods have those labels now, even things that never go bad, like salt. And now that's got people (like you) convinced that these things go bad even when they don't.

I'd smell the oil, and if it was rancid I'd throw it out. If it wasn't rancid I'd use it.

Depends where you live.
For example, French supermarkets are pleb tier because they have good markets and local shops.
Probably because the weather is nice, and they all go home at lunch time so they don't mind shopping all day.

American supermarkets are pretty much dogshit: CAFO raised meats, mediocre dairy, farmed fish, unripe produce that's been sitting under refrigeration for god knows how long and aisles of heavily processed junk/convenience foods. And little regulation, so when you buy olive oil you can't even be sure that's what you're getting.
