they're hella sturdy as far as tomatoes go. I like stuffing them with either ricotta and some basil, or filling them with sausage meat and a bit of egg and baking them. good shit.
I've been wondering for a while.. San Marzano tomatoes are technically plum tomatoes right? How much do they differ from Roma tomatoes?

They are Roma tomatoes. They're just grown in a specific region. Italian food purest will tell you that region is best for that tomato.

Easy peasy m8 I make some variation of this with these almost nightly, dice up your Roma's, put em' in a pan of olive oil, add some minced garlic after they've reduced a bit, crushed red pepper, fresh torn basil leaves. There are endless sauces you can make from them. Try puttanesca. Or bruschetta. Or... They're an kitchen staple friendo.
