I want to make this as a topping for ramen so I bought some soybean sprouts but they all have large heads on the end of them, and I've never seen that in ramen before. Do I cut them off?

Pic related is what I bought, more or less.

I'm a retard and I've only just started getting into cooking.

Also: my ramen recipe calls for sake but all I have is white cooking wine. Is that a legitimate substitute?

They're fine

you bought sprouted sprouts. Your palette wont notice the difference. If you go to the asian market look at the sprouts. there's actually quite a few varieties to choose from and each has their own place at the table. from soups, stews, salads or stirfry..

I'm going to use some pickled sprouts and cabbage on fish tacos tomorrow night.
>>
just drop em in the hot broth

White wine is a perfectly acceptable substitute for sake you weeaboo cretin.

do it

It depends. You'll end up with a smushy bean like texture. If you want; remove the yellow heads. Pulverize them to make a liquid and mix it in your broth.
