I'm not vegetarian, but most of what I eat is.
I'll be having a vegetarian dinner tonight. I've posted it before. It's beetroot and mushroom soup in mushroom broth with pickled egg. Not sure if you would actually be interested in that, though.

A more popular vegetarian meal for you might be something I call cheeseshroom.
Basically, slice up some portobello caps and some onion.
Stir-fry them together over high heat with enough salt added, splashing them with water from time to time in order to prevent burning as well as to aid in caramelisation.
Form into a long pile.
Top with slices of cheese. Any good melting cheese will do.
Split a long roll and toast it cut-side down in a separate pan (or don't) then place cut-side down onto the cheese/mushroom/onion mixture.
Flip the whole thing over so the cheese et al are sitting happily in the roll.
And there you have it. It's really just a cheesesteak without the steak.

Unless there were a cockerel present, no, it did not. Eggs just happen, whether fertilised or not. And if unfertilised, they will never have the potential to become anything other than delicious, delicious food.
Having raised hens for eggs in the past, I can tell ya that depending on breed, they just drop'em anywhere and don't have even a quarter of a fuck to give about it. They care if they go broody and try to incubate, even an unfertilised egg, but that doesn't really happen much in most egg-laying breeds. Even then, you just get'em wet with water and the hens forget about the eggs all over again.

Most western vegetarians include eggs as a vegetarian food. As I'm not a Copt nor Abyssinian, nor a Hindu or Buddhist or Jain, eggs are fair game and delicious. Then again, I'm not even vegetarian anyway, so it really doesn't matter.

No recipes but some dishes for you to consider:
Quiches (Broccoli cheddar is godly)
Curries
Fry tofu in corn starch or bread it and then cover in your favorite stir fry sauce with vegetables or dump some general tsaos on that shit over rice
Salads (lots of veg, cheese, nuts, fruits, etc can go over well. Try spinach with strawberries pine nuts and goat cheese.)
There's honestly so many options if you don't limit yourself to veganism.

If I eat too much meat I feel sluggish. I normally only eat one meal with meat per day, but I almost always have a protein source of some kind. Beans or whatever.

Tonight Im making spaghetti squash lasagna with garlic bread. I had vegetable soup for lunch (homemade) and I cant quit farting. Too much fiber.

I make a lot of bean dishes in my crock pot. You can make a pretty easy vegetarian chili.

That was your experience so Im not saying youre wrong at all, but Ive noticed the complete opposite. My birds seem very picky.

I have about six different breeds of chicken as well as turkeys and two different types of duck. Every single one of them lays eggs in the coop, and only two out of the (maybe) ten egg-laying females are broody. We have a seperate area for the ducks though.

Baked potatoes stuffed with white bean gravy, sauteed mushrooms, and a side of smoked pepper almond cheese (homemade) black beans, and avocado.
I usually blend a can of white beans with rosemary, olive oil, garlic, and pepper.

I use this recipe for the almond cheese

I just add in my own spices and seem to prefer lemon juice over vinegar when I make the cheese. Smoked black pepper makes it. My whole family thought it was real cheese during Thanksgiving last year.
I didn't use a recipe for anything else, I just read you can use white beans to make a gravy and use whatever herbs I have on hand. Garlic for everything, tho
Roasted brusselsprouts would also be a good topping for a potato.
