Sorry, OP. This is not the kind of vegan cookbook I'm not a fan of. The whole here's-a-bunch-of-shit-we-just-made-up-that-tastes-OK-and-happens-to-be-vegan thing leaves me cold. I'd be much more interested in a collection of more traditional recipes from various cultures that happen to be both delicious and vegan.

Because at the end of the day I'm quite sure the Fit Vegan Ginger is red-haired, vegan and reasonably fit. But I have no assurance her recipes are delicious. And looking at what you've posted so far I have my doubts.

I'm not vegan, but about two thirds of my native cuisine is vegetarian and most of that can be made vegan by the simple omission of cheese.

I've noticed that vegans in the west tend to come from families that can't fucking cook to begin with. That's why their idea of a vegan meal is just to take X-meal and swap the meat out for tofu. And it seldom works out well to do that. They approach all vegan cooking from that standpoint. Because I come from a culture with a heavy emphasis on veg and a long tradition of vegan cooking, I have a different, delicious view on animal-free food.

1. One large zucchini, chopped
2. 10 drops liquid stevia (flavor of choice)

Ingredients
1. One nori sheet
2. 4 T peanut butter of choice
3. 1/2 cup sprouts

Grain Free Spicy Mushroom Pea Risotto; Vegan, Gluten-free. Serves one.


Ingredients
1. 1 T bragg's liquid aminos
2. 1/2 cup frozen green peas
3. 6 oz. white button mushrooms, sliced
4. 1/4-1/2 tsp chipotle powder
5. Garlic and onion powders to taste (approx. 1/4 tsp each)
6. 1/3 cup TVP granules
7. Scant 1/3 cup water
8. Romaine lettuce for garnish


Method
1. In a medium microwaveable bowl, combine TVP and water and microwave for one minute on high. Set aside.
2. In a non stick skillet, eat the liquid aminos and sauté mushrooms and peas for about 2-3 minutes until mushrooms begin to exude their juices. Add spices and fold in.
3. Add now cooked TVP and a splash of water. If you want to add more chipotle spices, add it here. Fold in and cook for about 4 minutes, until liquid is absorbed.
4. Transfer to a serving bowl, garnish with lettuce, and enjoy!

Grilled Cheeze Tacos with Summery Tomato and Sweet Garlic Soup. Vegan, Gluten-free. Serves one.

Ingredients
Grilled Cheeze Tacos
1. 4 large romaine lettuce leaves, washed and dried
2. Two slices vegan bread of choice, cubed
3. One recipe "Basic Cheeze Sauce" (see this post!)
4. Chopped parsley, for garnish

Summery Tomato and Sweet Garlic Soup
1. 1 cup canned tomato sauce
2. 1 cup plant-based milk of choice (I used cashew, but soy would be BOMB)
3. Salt, to taste
4. 1/2 small clove garlic, grated (less if you're not that into garlic's spiciness)
5. 1/4 tsp onion powder
6. Less than 1/8 tsp stevia or sweetener of choice
7. Chopped herbs of choice, for garnish (I used parsley, but chives would be great too!)

Method
1. Preheat oven to 400 F and line a baking sheet with parchment. Place bread cubes on parchment (you cold spray with coconut oil cooking spray, if desired) and bake until crispy, about 15-25 minutes, flipping halfway through.
2. Remove bread cubes from oven and let cool 10 minutes. When cool enough to handle, fill lettuce leaves with bread cubes and set aside.
3. Combine all ingredients for soup in your vitamix or high-speed blender and blend until smooth, starting on low speed and working up to high. Pour into small bowl and chill until ready to serve.
4. Prepare cheeze sauce according to recipe instructions. Drizzle cheeze over tacos and sprinkle with parsley. Serve with chilled tomato soup and a side salad.

Ingredients
1. 3/4 cup bean-based small pasta noodles (I used lentil macaroni noodles from "Pasta Legume")
2. 1/4 cup chopped red onion
3. 1 cup raw cauliflower florets
4. 1/2 cup sliced grape tomatoes
5. 1/2 cup canned pinto beans, drained and rinsed
6. one stick celery, sliced
7. 1/8 tsp each onion and garlic powder
8. 2 T white vinegar
9. black pepper and dried parsley, to taste
10. salt, to taste

Method

Silky Peanut Butter Pudding; Vegan, Gluten-free. Serves one.
Ingredients
1. 5 oz. silken tofu
2. 2 T peanut butter ofchoice (I used "Just Great Stuff" brand, which is like PB2)
3. 10 drops liquid stevia
Method
1. In your mini food processor, combine silken tofu as peanut butter. If you are using a powdered variety, mix it with 1 T water in a so waste bowl BEFORE adding it to the processor.
2. Blend until smooth, scraping sides as needed. Add stevia once blended and blend again to distribute.
3. Spoon into bowl, top as desired, and EAT! It's also perfectly acceptable to lick the sides of your food processor...

Ingredients
1. 1/4 cup chopped onion

3. 1/4 cup water or vegetable broth
4. Dash of braggs aminos
5. 1/2 cup tvp granules
6. Onion and garlic powders
7. Black pepper
8. 1/2 cup water
9. 2 cups frozen broccoli
10. 1/3 cup frozen corn
11. 1 cup vegetable broth
12. 2 T ground flaxseed
13. Crushed red pepper flakes for garnish
14. 2 T spicy brown mustard


Method
1. Sauté onion and garlic in water and aminos until soft.
2. Add corn, broccoli, and water and stir.
3. In a separate bowl, mix tvp, onion/garlic/pepper, and 1/2 cup water. Nuke 1:30. Add mustard to tvp and mix well. Add mustard-tvp mix to pot and stir.
4. Bring to a boil, boil five minutes, reduce, add flax, stir, cook till thick and gooey.
5. Serve topped with red pepp flakes. Yum! Delish with crusty bread. Mmmm.

Southern Italy. Though not followed quite so much today, we have a long-standing tradition, probably from the first ancient Christians to come to the peninsula*, of avoiding eating a lot of meat as well as aversion to eating both meat and beans in the same day. Honestly, the flax bread is a fun way to eat a quarter cup of flax seed. I didn't bother to take another picture, but I made it again this morning, and you really have to microwave it a lot and then let it cool, so it dries out and firms up. It's sort of like a floppy crumpet at this point. Then you pop it in the toaster to get hot again, and dry out even more. It sounds completely awful, but I kinda dig it.

She posted a few dips too, there was a navy bean one. I haven't tried it but it has basically the same ingredients as any other bean dip, and it looks like it would be good.

Just to clarify, I think we're talking about added sugar, like what most people think of when you say "sugar". And what most recipes mean when they say "sugar free". (Which is actually not even accurate most of the time because they tend to just substitute with "natural" sugars and syrups, but I'm getting sidetracked..)

She clearly eats lots of carbs, and she mentions on her site, in her list of things that she buys "Fruits and Veggies".

Fresh fruit in moderation, because it too is a simple sugar but its offset by the fibers in it. Never drink juice unless you need to spike from being seriously low, then on the comedown you should be supplying yourself some complex carbs.

You overproduce insulin, so something like a slow burn complex carb like grains and bread (which is fucking awful for diabetes) is what you need. You supply it with Protein and it causes your body to burn them even slower.

Look up a complex carb diet, its really the best thing for sustainability

it just depends on how much you drink.

if you've ever squeezed oranges yourself you'd know how much work it would be to have enough juice for multiple full glasses every day.

just limit yourself to 4-6 oz of juice, and limit the rest of your sugar intake if you have some. you can also use some fruit juice to flavor a glass of water.

juice can be fine if you know how much to drink, but it doesn't mean you can drink juice instead of water all the time.
