It's the same reason people don't eat lobsters over a certain size.

Lot's of people think the meat becomes tough when they get older, but really it's just that you need to overcook them to cook them through, and they basically turn to rubber.

Because they're very deep water creatures. They only turn up occasionally, and they've never been seen alive with the naked eye. It's only recently that we've even sent stuff down to film them.
They were, for ages, only known from sperm whale stomach contants.
