How seriously do Italians take their pasta?
I once asked a Korean lady shilling marinade if it was good for making bulgogi, and her eyes became almonds then explained the recipe and procedure.

Italians used to take their pasta more seriously. They used to make it fresh often and demand it be fresh in restaurants. Now many of them boil dried Barilla or some other such shit. In certain regions though, you'll still find that they're pretty serious about their pasta.
futurist italians take pasta VERY seriously.
the others are just so familiar with it i would imagine they take it for granted. but when they see other people fuck it up it annoys them.
and the whole 'al dente' thing is just fetishised by people into restaurant culture, it is not a particularly italian thing, everyone likes texture in their food.

Pasta has always been mostly dried because it has a very long shelf life and it was important, ask any Italian what kind of pasta they prefer and the answer will always be dried and it's been like that for centuries.
