I watch a lot of Japanese cooking videos, and noticed that the sugar is different than the kind I'm used to seeing, it's more clumped. Is this some special kind of baking sugar, or is it caused by Japan being a more humid country or something?

japanese sugar comes from a different plant altogether. refining it is very expensive. thats why you dont see it in the states very often. the plant is called a lulurgi flower and the sugar is refined from the bottom 3" of the root. its super weird. the "clumping" is a result of natural earth-ridden tecazotes that form when the sugar is refined. although most consider japanese sugar to be actual crystal sugar, its more like a viscous hardened gas.

Probably because it helps googling when someone spoon feeds you the correct characters. At least I've found this to be helpful when looking for other foreign foods, since transliteration results in horribly wrong google results.

Any way, it's a useful ingredient. It dissolves almost as fast as confectioner's sugar, but without the off flavor from whatever they put in there to prevent clumping. Good for Chantilly cream.
