Hearts are string and chewy as fuck, they are literally working non-stop, therefore you need to slow cook them. I hope her friends like watching a slow cooker for 5 hours.

I've grilled heart and it turned out fine. It marinated for some time but I didn't have to slow cook it.

Well, we have two hearts on hand, so I think we'll grill/bake one and braise one. I didn't even think of braising it, so that was very helpful.
