Tried this for the first time. Cooked over a grill pan in addition to microwave cooking.

I microwave with soaked paper towels. And then 15 minutes total on the grill pan at medium heat.

Parsley and italian seasoning.

I wanted a short meal in the morning. Time to sleep now. :3

I guess I like how it was dry because it made eating plain potatoes palatable. The flavor was interesting. I don't like my food too greasy, and the grill pan helped with that.

The taste was weird though I dunno. Maybe I never really liked browned potato that much. I'm pretty sure I didn't overdo the temperature for the olive oil.

It took so long though. Maybe I'll use a higher heat oil next time, although I'm not sure my non-stick pan can deal with the higher heat.

I like baked potatoes so I don't know how this was different. The browning makes the potato taste like too much or something.

I make fried potatoes weekly and have never had an issue with them being undercooked. I tend to cut them into smaller cubes, then fry for 10-15 mins. I put some paprika/mixed herbs on it.

Thanks donatello. But I needed the potatoes to fit all on one plate in the microwave, so I don't have to do more than one batch. To cook evenly, I put them in a circle, not piled too high.

I put a light layer of italian and a ton of parsley because you can't have too much parsley on potato.

I microwave because it takes only 6 minutes for 3-3.5 sliced potatoes. Faster cooking with the microwave preserves more of the vitamins. Minerals are also kept more compared to boiling in a pot of water. Healthier and more filling.
I microwaved a little less because I was frying them as well.

I figured out from the last two answers how a grill pan is useful for vegetables. I don't have a grill pan that isn't non-stick.

Plus, the water steamed from the vegetable will evaporate out instead of cooking the food. Since I wanted to fry, not sweat.

So yeah I'll have to buy those other oils. I don't think coconut is much better, unless it's refined.
The grill pan I have is non-stick, but it's good quality so I'm sure it can handle a medium-high temperature.

Maybe I'll do that when I try caramelizing, to help offset the taste. I'll fry first then caramalize at a lower temperature with butter and some sort of sugar.
I'll have to switch from the grill pan to a saute pan.
