Sounds like it could be good, but where does the cheese come in?

I like fish and fruit together, in certain combinations, and I can see how fried bananas would be good on grilled or broiled salmon, but I don't know that I'd do it the same way as you did.

Salty sweet fruirt smokey is a known flavour combo. It's why fancy foofoo fuck dishes always have a pomegranate reduction or some shit. The citrus and the sugar pairs well and emphasises the other tastes. Try a drizzle of lemon instead next time, or puree the bannana to make some kind of mash. Plantains are good for that, fried fish and plaintain is a carribean staple

I had some form of smoked cheese on hand and I usually get a little slice of that to go over maybe a third of my salmon.
It's a nice flavor, but I don't want to rob myself of the salmon flavor either, so I only use a small amount.
