I bought a ham hock for cheap, got any ideas what to cook with it? I was thinking pea soup or some sort of stew. Also, skin on/off?

I used one once in a slow-cooker beef stew. It basically let out all that fat and bacon flavor into the broth. It was amazing. I also use a cup of wine in my stew as it leeches out all the good fats and flavors.
