I bought a couple packs of these on a whim, remembering how sweet tarts were my favorite candy growing up.

I think that's just a sign you need to brush your teeth and/or see a dentist more often. I don't get any umami at all from fruit snacks. Although it's also possible that you're eating a brand that I've never tried. What are you eating? I usually stick with Welch's.
