Hey /ck/
I'm trying to pickle herring and managed to get everything but the herring. Surprisingly none of the places in town have it but I need to get pickling. Any suggestions for an alternative fish to pickle? Similar as possible if possible

I'm starting with Brown Sugar and Kosher Salt in water. After that it's:
- water
- white vinegar
- allspice
- bay leaves
- grated ginger
- pickling spices
- more brown sugar
- red onions
Never tried it before

Sounds simple enough. I'd love a second opinion on this, I'm gonna check another nearby town for herring tomorrow but I'm not too hopeful after today
