I just found out how easy and cheap it is to make seitan compared to buying tofu and tempeh but I want to know how it is for health.
The macronutrients are great but is eating so much gluten detrimental to health? I understand the gluten free thing and sensitivity is a fad but does eating basically 100% gluten products very often bad for the body and cause inflammation? I can't really find any definitive research so I was wondering if /ck/ has any personal experience because I can imagine myself eating quite a bit of this because it is tasty and otherwise healthy.

Gluten isn't inherently bad for you. Frankly as long as you aren't eating 100% Seitan all the time you'll be fine. Same goes for Tofu.
Add cooked veggies, salads, etc. problem solved. Don't eat just one kind of thing all the time. You're an omnivore.
