away from home again this christmas, but my family sent me some stuff from omaha steaks. how can I cook this thing? supposedly it's partially cooked, so do I just need to get it browned on both sides?
If it has indeed been sous vide'd, then you just need to dry it off, season it, then fry it on both sides until it has a nice crust.
how cooked do you like it? what does it say about how much they were cooked? were they cooked low temp to 57C or something? i've never heard of buying partially cooked vacuum packed steaks before. just fry it like a normal steak and you'll most likely be fine though. a par-cooked then chilled steak won't really cook much faster than a raw steak assuming you're taking them both to the same temp.

since it came in a boiling bag, just boil it water for about an hour
wala!

the package didn't have any information in it. should I just throw it in the pan until it gets to 130 degrees? is there a way to fry a steak without it getting really smoky? I'm in a hotel room right now so I don't want to be setting off any alarms.

Actually taking a closer look, it doesn't look at all partially cooked.
Looks like it's a marinated or left in a brine or something.
In that case you just dry it off then fry it, cooking it to your liking.

>i've never heard of buying partially cooked vacuum packed steaks before
This. It may exist, but of the 34523452345 steaks I've eaten I have never heard of steaks partially cooked before purchase. Be wary
welp I seasoned my meat and it's sitting on paper towels right now to dry the surface off. will it smoke less if I put oil in the pan or rub it onto the meat?

rub the oil into the meat
well fuck, I ended up overcooking my meat. I let it sear for a minute on each side, but that ended up pushing it all the way to 148 degrees.
I still have two left that I'm saving for new year's. should I forget about trying to get it brown on the outside and just make sure it doesn't get too warm inside?

What the fuck are you doing. Sear for 1 mins on each side. Don't know how you got it well done unless you thawed it in boiling water. Serve it with a side of A1 and be thankful your parents thought of you.

like I said I did sear for one minute on each side. I was using a stop watch so I didn't mistime it either.
