Love chiles. Habs develop a kind of plum-like sweetness once you learn to love the heat. My mouth is watering just thinking about it. Once you hit the correct onion-tomato-chile nexus... I need to change shirts.
Scorch the little fuckers, then rub the blackened skin off w a cloth under running cold H2O. Then open the chiles and remove the membranes and seeds with the edge of a knife. WASH YOUR HAND IN MILK OR YOGURT before you scratch your nuts or rub your eyes.
Make an X on the bottom of the tomatoes and dunk them in simmering H2O for 30 seconds, peel the skin off. Chop neatly, remove as much gel and as many seeds as possible.
Don't oversalt things.
