A tiny bit of fat (olive oil) and acid (lemon juice) together are fantastic on many dishes, particularly chicken or porkchops just off the grill.
When I take them off the grill and put them onto the plate, I add a little olive oil and lemon juice, to rest while the meat juices mix with the oil and juice. This 'sauce' is phenomenal.
