Basically this.
I usually buy bone-in/skin on breasts at home because I get them cheaper and they're usually more flavourful than their boneless skinless counter part.
But this is just for convenience sake because the breasts are so easy and quick to cook.

I'm thinking that I'm going to start buying whole chickens and deboning them myself since I actually know how to now.
And getting used to making other parts of the chicken.

I buy 5 lb of thighs and 5lb of breast in the large packs, dust them with spicy sazon spice mix, put half in the fridge overnight and half in the freezer for the next batch. Oven cook them, cut them into chunks, and that's most of my protein right there, fairly cheap as well.

Made Chicken thighs last night for the first time. I've never been more satisfied with something I've made. After about a little over a day of marinating in a dry rub of garlic, paprika, salt, and pepper, I got the skin to become super crispy and then I baked it.

It tasted like professional deep fried chicken. I kept wondering why my breaded fried chicken never tasted right, and it's because it lacked the skin, bone, and meat of the thigh. This stuff was moist and juicy too, I literally could see the meat juice bubbling as I bit into the meat.

Was pretty amazing.
