Eh....it would be a challenge, but not impossible. I've made a fantastic pasta sauce use red sweet (bell) peppers before, so I could easily substitute that.
The problem would be this: tomatoes are part of the nightshade family. So, if you are allergic/can't eat tomatoes, then you also probably can't eat any kind of pepper, eggplant, potatoes, or tomatillos. So that will really narrow things down for you.

Maybe you can oversee the effects of no tomatoes on sandwiches and in salads.
I would worry more about the effects for your meals. Man, most (or at least a significant part of them) sauces are based on tomatoes.

I have to go over to a nearby town in a few minutes for a flu shot and to refill some medication at the pharmacy.
I'll probably stop at a sandwich shop for a submarine sandwich and bring back to my office to eat.
If I was going to eat it there, I would want slices of tomatoes on it. But bringing it back to the office it would become soggy if it had tomato slices.

Wouldn't bother be not having tomato in salads or sandwiches, there's plenty of other alternatives. I'd be pissed about not being able to make tomato based soups or sauces. No more spaghetti or lasagna or pizza sauce would make me sad.

What a weirdly specific thing to forbid. Nightshades I could see, but just tomato? I'd keep eating them and tell him I stopped. If he sees improvement, I switch doctors.
