Bananas are best medium-well. Mostly black but still with some solid bite to them, otherwise it's pretty much baby food.

Agreed though, banana doneness is pretty much the inverse of steak when talking about flavor and texture.

I eat mine when they are yellow with lots of brown spots, pretty much perfect.
