no one can understand china if you haven't been or aren't in china.
a huge amount of business is done with bags of cash. houses are bought with bags of cash, cars etc. all that has happened with these exchanges being closed down is that the business has gone underground, or at least offline.

people moving hundreds of thousands/millions of $$ into btc are still doing it, they just aren't using these exchanges. small time people buying $5000 are still doing it, they just aren't using exchanges.
