Thinking about putting $3k in Vanguard 500 Index Fund Investor Shares (VFINX). Good investment for long term growth? Or suggestions for alternatives that have better yield with lower risk?

Lol, nah. You can have lower yield with much lower risk but not what you stated.
Personally, I would only invest in Vanguard funds if you can't get 7% returns post inflation elsewhere with less risk.
Considering you only have 3K, you can get much better returns with that elsewhere. For example, you could spend that 3K on further education/certifications and earn 10K+ more per year. That's much a higher return than 7% and possibly tax deductible.
For poorfags like you I almost always encourage taking steps to improve your income, reduce expenses, and set yourself on the path of self employment to start getting paid a higher share of what you're worth.
Although, I'm assuming you're a poor wagecuck, so adjust accordingly if I'm completely wrong.
