I'm currently developing an app, and I am working with an artist (online, from another country). I am the sole proprietor of the business and we agreed that he would be paid a percentage of any potential profits.
Basically, we would like to put it in writing that any art work he creates for this project belongs to me and in exchange he receives x% of app profits that he will invoice me for every 1/2/3 months (whichever time period we decide on).
My question is, does this "legal agreement" have to be something looked over or created by a lawyer? Or can we basically just type up something ourselves (perhaps using and changing an existing template found online) and then both sign it and agree to it? Would that hold up if it were to come to legal matters?

What.
>artist makes art
>pay them in perpetuity
If you dont have enough money to buy the artwork outright or dont want to take the financial burden on I guess profit share makes sense.
Once the site starts making serious money though, just buy all new art and end the contract.

This is indeed the case. We trust each other quite well, we just wanted to legally protect ourselves.
