Need 5000 to run a service node a.k.a master node. Service nodes get a cut of the trade fees from a trade on the dex. Good incentive to hold as an increase in trade volume on the dex = direct profit for the node provider.
More nodes=less supply of tokens for trade = higher scarcity= higher price.

No you don't need to use BLOCK token to use the DEX.
The token is used to facilitate a trade. Say I want to buy 1eth @ market rate. The trade fee for this trade (say 0.001%) is converted from eth -> BLOCK and the block is transferred to the master nodes.
The purpose of this is to incentive the upkeep of nodes running and avoid a centralised cartel. More nodes=healthier network.

SPV as a concept is actually mentioned in satoshi's whitepaper so if that level of decentralisation works for him it's fine for 99.99% of the population.
