Anybody have any experience running a food truck?

You're gonna have to jump through a lot of hoops and your gains won't be anywhere near that of opening a normal restaurant (if run well, and not a money-laundering restaurant that inevitably gets you fucked). You're really trading potential profits in the industry for the freedom to park outside baseball games and on music festival grounds.

Like something I'd like to try for a year if I were already rich from my office job and didn't need much money. It sounds nice, really.
