The password encrypts your private key. Of course it will still work with an unencrypted private key.

You're not "logging in" to anything. MyEtherWallet is a client-side javascript program. Since they don't store your private keys or any information at all on their server, it's 100% your responsibility to keep your private key safe. Don't store it on your computer, have it on a piece of paper and keep it somewhere safe.

Oh and what's getting you confused is the UTC file is encrypted. Even if a hacker stole that off your computer they would need your password to spend anything. The unencrypted private key though, if they didn't give that to you, it wouldn't really be your wallet. You have to keep that in cold storage.
