What wallets does /biz/ trust with it's ETH? Or LTC for that matter?

myetherwallet lets you generate a paper wallet and use it from an air gapped computer (if that's your thing).
It will let you sign transactions offline fromand the air gapped pc, and then transport them to a network -connected computer for transmission.
If you don't care to go as far as an air gapped pc / cold storage wallet, I'd just use Mist.
Last I synced Mist with the network though, it took forever. If that's a problem for you, look up Parity, which is written in Rust and provides the same functionality, but with better performance.

Also, for myetherwallet, download the code and run it in your browser on the offline pc, obviously... Don't use the online version of their site, even though its probably fine.

An exchange could potentially freeze your account for no reason other than fuck you. It's the same problem people have with PayPal.
Also, potential for Mt. Gox-esque failure of the exchange. Getting the coins out ASAP reduces the possibility, however remote, that a hacker or disgruntled exchange boss could run off with all of the coins on the exchange.
I use Electrum for my BTC because I can take it offline, where I'm responsible for it.
