You buy a shitcoin.
You do your best to convince everybody else it's the next big thing.
They buy it, raising the price.
You sell and profit.

This is basically how it works for everything except the coins that actually have real world uses (Bitcoin / XMR)

Most of it is pump and dump shills, part of it is truly believing that X coin is the wave of the future. Mostly the true believers actually know about block chain and choose either a larger coin, or one with some particularly appealing feature.
