I'm a NEET, and I want to be a stay at home mom in the next 3-5 years. What degree or experience can I get in the mean time that will enable me to make a solid supplemental income from home? My fiance's factory management job is very stable and will probably earn him a solid middle class wage by then, if that matters.

Why not be a stay at home Girlfriend/wife right now?
Do all the domestic chores. Clean his house, do the laundry, do the dish, etc. make him homemade dinner most nights and pack up the left overs for his lunch the next day. Make him feel like a man. GP to the gym and keep your body nice and fit.

This is already in place. Being feminine and submissive is my primary occupation, which he obviously appreciates, but he also doesn't feel confident his income will be enough for us and our kids to live a good life, afford a down payment on a nice house, save for retirement, etc.

college will just put you in debt and delay the mommy process. Unless you have an easy way to get out of debt or can go to college debt free I would avoid it as you, the exception is if you are 100% sure you will take it seriously. It seems you don't care to be a breadwinner though so I feel like your college degree won't give you a significant advantage in wages with jobs you can get unskilled. You could go to a cheaper two year college to become a paralegal. I would go with an option like that if I were you I guess. There are other two year degrees which lead to a job.

I don't think I have enough experience to make mad bank in the next 3-5 years, so that's why I'm slightly inclined to look for something that I can do on the side from home while mommying. My one good skill is Chinese fluency and some medical terminology training. If nothing else I could do CHI/ENG medical translation, but even then I don't exactly have certification for it.

I couldn't do a uni, I want to avoid debt at all costs. There is a good community college in my area which I'm not too proud for, but I'm not sure what skills or certifications I could pick up that would be useful from home or for making mad bank until mommy time.
Is there anything I can do from home with paralegal qualifications? I've been thinking that tax law could be useful for my own family finances, and maybe I could do virtual consultation from home. I am genuinely interested in tax law too which helps.

As a comparison, I'm currently doing freelance web development as my sole income. There's a lot of work out there but to be completely honest with you, it is stressful as fuck. I'm very happy when I'm actually doing the work, but juggling it with finding clients and chasing payments and worrying about the inconsistency makes me want to stop it and find a "real" job quite soon.

However, I think things would be different if it it were "supplemental" and I didn't have to stress so hard when I don't get paid on time or I have trouble finding clients or I want to say no to a project that is obviously going to be a nightmare. So it depends on exactly how reliable it needs to be, I guess. If you can fall back on your partner's income when needed, it would presumably be okay. I really have no idea about how strong the actual translation market is so you would need to gauge that.

Yeah, I'm very wary with freelance stuff because of that very thing. I hate shilling myself. I guess beggars can't be choosers. Maybe there is a way I can set myself up with a company so it's more stable.
